Chicken and Rice Pilaf


Simple, easy and quick to prepare and with the right ingredients, gluten-free. Both viable for hiking and for cabin stays in the winter –




Chicken and Rice Pilaf

In a sandwich bag:

  • 2 cups instant rice
  • ½ cup freeze-dried vegetables

Also take:

2 packets broth concentrate

1 packet olive oil

5 ounce can chicken breast (with pull-top)

3 sticks string cheese (3 ounces total)

One Pot Method:

Bring 2½ cups water, broth concentrate, oil and chicken with broth to a boil in a 2 liter pot. Add in rice mixture, let come back to boil, take off heat and cover, rest for 10 minutes. In cooler weather or at altitude, insulate in a pot cozy.

Stir rice, dice up cheese and stir in.

Serve with hot sauce on the side.

Serves 2 to 3.
