Instant hummus mix is a versatile ingredient to have on hand for trail cooking. In this recipe it makes a quick spread or dip for lunch, and is vegan friendly.
Curried Fruit Hummus
At home: Pack the hummus, fruit and curry powder in a sandwich bag and seal tightly. Pack with it the oil, and a serving of crackers of choice or tortillas.
Add 1/2 cup cold water and oil, stir and seal tightly. Knead the bag gently till mixed. Let sit for a few minutes to rehydrate. Serve with crackers or spread on tortillas.
