An easy vegetarian lunch, ready to eat in a couple minutes.
| 1⁄4 | c | instant hummus |
| 1 | t | tomato powder |
| 1 | pkt | salsa (2 t) |
| 1 | T | extra virgin olive oil (1 packet) |
| 1⁄3 | c | water |
Substitute dehydrated salsa for the packet. Use 2 T dried and add in with the instant hummus powder. Add an additional 2 T water and allow to rehydrate for 10 to 15 minutes before eating.
At home: Pack the hummus and tomato powder in a snack size plastic bag. Seal tightly and pack with the salsa and oil packets. Take with you a serving of crackers or other nibbelage of your choice.
Add the cool water, salsa and oil. Stir well or knead the bag gently till combined. Let sit for a couple minutes to blend the flavors.
Serve with the crackers or spread on a tortilla.
