Tomato & Spinach Chicken Mashers
| 3⁄4 | c | instant mashed potatoes |
| 2 | T | dry milk |
| 2 | T | diced dried spinach |
| 1 | T | diced sundried tomatoes |
| 2 | t | chicken gravy mix |
| 1⁄4 | t | ground black pepper |
| 1⁄4 | t | dried chives |
| 1 | cn | 3 ounces chicken |
| 1 | oz | swiss cheese |
| 1 1⁄4 | c | water |
At home:
Pack the dry ingredients in a quart freezer or sandwich bag. Pack the chicken and cheese with it.
Freezer bag method:
Add 1 1/4 near boiling water and the chicken with broth. Stir well, seal tightly and put in a cozy for 10 minutes. Stir in the diced up Swiss cheese.
Insulated mug method:
Add 1 1/4 cups boiling water and the chicken with broth to the dry ingredients. Stir well, cover tightly and let sit for 10 minutes. Stir in the diced Swiss cheese.

I put a lot more spinach in this than the recipe asked for. I guess I feel we need our greens when on the trail. This was so very good. Creamy and satisfying and yummy. We will certainly make it again. I'm pretty sure we added chicken to this, too. We used "singles" type swiss cheese and it melted to make a creamy sauce.
