Cheesy Chicken and Corn

A very hearty 2 person meal, it can be prepped both as FBC (Freezer Bag Cooking) or One Pot methods. Your choice!

In a quart freezer or sandwich bag pack the dry ingredients. Pack the chicken and oil with the bag.

FBC method:

Place freezer bag in an FBC Cozy. Add chicken, oil and 2¼ cups near boiling water. Stir well, seal tightly and let sit for 15 minutes.

Stir again.

Insulated mug method:

Add chicken, oil and 2¼ cups boiling water to the dry ingredients in a large insulated mug. Stir well, cover tightly and let sit for 15 minutes. Stir again.

One Pot Method:

Bring 2¼ cups water, oil and chicken to a boil in a pot. Add in dry ingredients, stirring well. Cover tightly and take off the stove. Let sit for 15 minutes.

In cooler temperatures or at high altitude, use a pot cozy to insulate.

Serves 2.
Notes:
Cheese sauce powder is similar to what comes in Mac n’ Cheese boxes but is often creamier as it contains milk added. It can be found in some grocery stores, and easily online.
You can use fresh cheese as well, 1 to 2 ounces, diced up and added with the hot water, if you desire.
