One pot dessert.
Pack the fruit in a small bag or leave in its container. Mix the baking mix, sugars and cinnamon in a sandwich bag, seal tightly.
In camp:
Put the apricots and 1/2 cup of the water in a non stick pot. Bring to a boil. Meanwhile take the remaining 1/4 cup water and pour it into the baking mix bag, seal tightly and shake, knead to combine. Lower the heat to medium and pour in the baking mix. Mix to combine and scramble, like eggs, till baked through. You will have to keep an eye on the heat, lowering as needed. The high content of sugar means it will be like a cross between a soft cobbler and a biscuit when done. It doesn't have to be baked through to be enjoyed, eat when it looks good to you!
