Curried Fruit Hummus
Description An easy to prep trail snack or lunch - no hot water needed. Ice cold stream water works great in it as well. This is a popular recipe when we do trail cooking presentations.

- 1⁄4 c instant hummus
- 3 T freeze-dried apples
- 3 T freeze-dried mangoes
- 1⁄2 t mild curry power
- 1 T extra virgin olive oil (1 packet)
- 1⁄2 c water
- At home: Pack the hummus, fruit and curry powder in a sandwich bag and seal tightly. Pack with it the oil and a serving of crackers of choice.
- Add water and oil, stir and seal tightly. Knead the bag gently till mixed. Let sit for a few minutes to rehydrate. Serve with crackers.
Dry weight of mix, fruit and oil is 2.7 ounces.
