This reader-submitted recipe for mashed potatoes can easily be made vegetarian. The recipe is a bulk one, making three separate meals.
Sasquatch’s Taters
Ingredients:
- 1¾ cups instant mashed potatoes
- 1½ cups dry milk
- 2 tsp low-sodium chicken bouillon
- 2 tsp diced dried onion or granulated onion
- 1 tsp dried parsley
- ¼ tsp ground black pepper
- ¼ tsp dried thyme
- 1/8 tsp turmeric
Instructions:
Mix the ingredients well at home, divide them into 1-cup measurements, and put them into three pint-freezer or sandwich bags. One cup of dry mix makes a meal.
FBC method:
Place the freezer bag into an FBC cozy or similar, and add 1 cup near boiling water. Stir until smooth and let sit till cool enough to eat.
Mug method:
Add 1 cup of boiling water. Stir until smooth and let sit till cool enough to eat.
Add salt to taste, if desired. If it is too thick, add a bit more water.
Serves 2.
Notes:
For a vegetarian version, use vegetable bouillon.
